We were sent a sample of Wahoo to cook with, and my only regret is that I have not eaten or cooked with it before. We first ate some raw, then semi-cooked, and finally grilled. I enjoyed all the preparations, though my favorite is raw. The fish has a buttery richness and melts in the mouth, and with a spicy olive oil drizzled on top, it becomes sinful. Eat Wahoo, it’s unbelievable.
