Many will laugh, but I must reference L.A. Story, particularly the comment by Sarah Jessica Parker regarding getting dressed and jewelry accompaniments. To paraphrase, look at yourself in the mirror, look away for a moment, and then look back quickly. The first thing that catches your eye is what needs to be removed. The same examination should be applied to cooking and constructing dishes. In fact, I apply this approach or technique to our compositions. The key is the willingness to take something away, even if you really love it. Edit yourself.
