Again and again I get clarity from walking our dogs. Today I was thinking about our disks of cauliflower-smoked goat cheese, a more refined version of our false yuba, which we can drape over hot ingredients, place them back in the oven, and allow the puree to go Dali on the dish. I then began thinking about our reheatable hollandaise sauce and combined the principles. We shall revisit working with these hot disks of sauces and purees. This refinement in ideas allows us to perform more advanced and refined preparation of dishes, which will allow for an ease of execution during service.
