By seasoning a fairy tale squash with tasso spices, vacuum sealing it, freezing it, and thawing it, we ended up with a delicious, aromatic raw squash consomme. We were then able to cut the squash up and blend it with its juices to make an incredible puree. Up next: carrots, parsnips, celery root, and onions. Oh, and let’s not forget pumpkin with pie spices for pumpkin pie consomme.
