We used our What If flour to make these hand-rolled noodles. We used the miso noodle recipe from our book and omitted the miso for the obvious reason—it’s not gluten-free. Once the dough was made and rolled into sheets, we cut it into squares with a 5-wheeled cutter. Then we used a garganelli dowel and board to roll the noodles. Once they were made, all we had to do was boil water.
