This shape is Zucca. We first learned of it when the folks at Arcobaleno tweeted a picture of the finished noodle. They had come across the craftsmanship of Sfoglini pasta. The connection was amplified because the Sfoglini team uses larger Arcobaleno extruders. Marco Canora, another extruder aficionado, saw the tweet and asked about the die’s availability. It turned out the Zucca was not currently available for the slightly smaller AEX 18. Marco’s interest and the Sfoglini success prompted Maja at Arcobaleno to get a few test dies made for the machine. We were fortunate to get to work with one and the results are fabulous. These little pumpkins stuff themselves naturally when tossed with a chunky ragout. They are the perfect illustration of autumn’s bounty.
