We blended equal parts by weight of powdered green chiles and powdered white miso. The blend of delicate heat and tar-like undertones of the chiles with the salty richness of the miso combined to create a seasoning greater than the sum of its parts. Initially, these dried seasonings were destined to continue fueling my pasta fetish. Still, there is only so much pasta I can eat and many more ideas and dishes to explore: curing madai, seasoning root vegetables, folded into pie and other doughs, blended into butters and fats.
