Seared Nantucket Bay Scallops onion syrup, celery root, powdered lardo
This dish just came together. I had my plans, Aki had hers. Rock beats scissors, thankfully. The instrumental element in the dish is the celery root puree. Aki insisted on its inclusion. I slipped in some cream cheese, and now it is my favorite ingredient to enrich celery root puree. When the pieces of the puzzle finally came together, I was in awe at the elevated level of deliciousness. Aki knowingly grinned and nodded her approval. The parts of this dish all may be used elsewhere, though their synergy here is exciting to taste.
