I am constantly looking for great uses for unsold doughnuts. Thankfully, we sell out most of the time, but there are days when we have extra doughnuts. Aki was rhapsodizing about macaroons—the coconut cookie bound with sugar, egg, butter, and flavorings. Eureka. I could make doughnut macaroons. I took a recipe for macaroons and substituted doughnut pieces for the coconut. I made a few other modifications to customize the cookies. The result was caramelized, chewy, moist, and tender doughnut macaroons. Now I need to find an outlet for them (and possibly add some coconut, at least, if Aki and Amaya have their way).
