Tonight I am putting buttermilk to the test. I wondered aloud how it had taken me so long to think to add buttermilk to the mix. I added 10% buttermilk, soy sauce, hot sauce, and a dash of liquid smoke to a blend of 85-15 ground beef. I seasoned the mixture with some additional salt and mixed everything together. I formed the burgers into patties. I tasted the raw mixture and it had a rich savory flavor. The burgers will sit seasoned in the refrigerator and be cooked in a few hours. Time will tell the results.
