The idea of making a cookie magic shell has been on my to-do list for too long. It is modeled after our shaved shortbread. Instead of pureeing the cookies with butter, we used white chocolate chips and sunflower seed oil. For our first version, we used Newman’s Own sandwich cookies to make a liquid puree to pour over ice cream. The result was magical. The cookie shell has huge potential. It is a fantastic topping and will make an incredible mix-in. It also has potential as a full coating for ice cream bars. The variations and interchangeable parts allow for a wondrous exploration. Oh, and I’m pretty sure this will work out well on a doughnut in the near future.
