Crumb-topped custard-based pies are delicious. The crumb adds texture and additional flavor to the pie experience. In this version of our streusel-topped pie, Aki made the streusel with gingersnap cookies. She kept the pumpkin light on spice so the aromatic element of the pie came from the crumb itself. This variation makes me excited about the flavoring of streusel, especially cookie-based, and combining them with pies.
