Aki made Stella’s tender and soft oatmeal pie cookies. Then I tore them apart and dried them out in the oven. I ground the cookies with 2 parts white chocolate and 0.3% salt. The cookies blended with the white chocolate tasted like crumbled oatmeal cream pies. When I sprinkled the crumbs onto our vanilla glazed doughnuts, the transformation back into the original was complete. The crumbs stuck to the glaze and flavored our yeasted vanilla doughnut. The result was a doughnut that had an extremely addictive quality. It combined 2 parts of nostalgia with 1 part creativity. It was exciting to see the results as guests smiled and returned for seconds.
