Corn Kimchi
It is amazing what happens when we combine the existing with the similar sounding. As we mixed the corn and the minced kimchi to make a quick salad, a floodgate of ideas opened: kimchi butter to slather on corn, dried powdered kimchi on popcorn, kimchi and corn salsa for tacos and nachos, corn soup with kimchi cracklings, creamed corn enriched with kimchi mayonnaise, corn slathered with kimchi mayonnaise and cotija cheese. All of these ideas are viable, delicious sounding, and now on our to-do list.
