Tomatoes are starting to pop in the markets. Paired with fresh buffalo mozzarella, they are a canvas for any number of flavors. While classic Italian pairings are lovely, we’ve also been known to go Asian (pickled ginger brine, togarashi, and toasted nori or kimchi juice and a drizzle of toasted sesame oil) or Indian (chilis, cumin, lime, cilantro, and mustard oil) with our seasonings.
