We seared the gnocchi-shaped rice cakes in a blend of avocado oil and bacon fat. They developed a crackling, almost pork rind exterior, and became soft and gelatinous inside. I drained off the fat and added hand-crushed tomatoes and a healthy addition of the Explosive Mix to the pan. I simmered the mixture together to heat the sauce and coat the rice cakes. I put the rice cakes into a bowl and topped it with thinly sliced lovage. The rice cakes absorbed the sauce and retained a small amount of the initial crust we developed. It was a quick way to explore how they behaved in a cooked situation. It sparked a further discussion on the importance and refinement of sauces, condiments, and the essential elements needed to finish a bowl of noodles or rice cakes. Finally, it was another reminder to push what is possible when flavoring the rice cakes and to see the potential we have in the creation of the puzzle pieces.
