We created the corn and black lime noodles to complement a primary noodle. That noodle is made with exo cricket flour blended into our noodle base. The combination of corn and cricket was sparked by numerous Mexican applications using the insect as a textural seasoning. The cricket flour has an intense full earthiness, similar to the flavor profile of huitlacoche. The two noodles elevate the flavors of each other in a synergistic combination.
