Working from home, it’s very difficult to motivate myself to make lunch for one. If I’m testing recipes there’s always something around, if not, and if there are no leftovers kicking around, lunch can be difficult. I have no idea why, I know how to cook better than most. It’s not as though making lunch is hard work. Yet, somehow I just don’t get around to it, instead grazing on fruit and chips all day long. While this may sound like a reasonable solution, Alex and Amaya will tell you otherwise. By around 4:00 pm I am starving and short-tempered, desperate for food but too hungry to contemplate the time it will take to create a meal. So the last time I went shopping I made a conscious effort to buy a little too much food in order to force myself to make lunches. I hate to waste things so I knew having extra things in the fridge would push me to try and use them up.
Today I grabbed the boneless, skinless chicken breasts, something I normally never buy, and decided to make a meal. I split them in half lengthwise so they would cook quickly. Seasoned them with salt, coated them with Penang spice blend, and then seasoned them lightly with salt again to highlight the flavor of the spices. I cooked the breast in ghee in a large sauté pan over medium heat, turning them often to promote fast, even cooking without burning the spices. Then I transferred them to a plate to rest while I filled the pan with baby kale. A little salt, a splash of wine, and it wilted quickly to accompany my chicken. I spent about 12 minutes making lunch and I have leftover chicken for tomorrow. It was a good day. I’d like to say that I’ve turned over a new leaf, but we’ll see what happens next week.
