We thinly slice rhubarb and dress it with salt, olive oil, and honey. We let the rhubarb marinate and the seasonings blend. A dressing forms. We slice a wedge out of each radish and put a piece of nori in the incision. We add a piece of the marinated rhubarb and spoon the dressing over the radishes. The bites are crisp, sharp, acidic, and savory. These amped-up radishes bring spring into full swing.
