We revisited our false egg. This time, instead of using cauliflower to wrap an egg yolk, we used potatoes. Yesterday, in a workshop, we made a puree of potatoes enriched with 1% Methocel A4C. We used plastic wrap to encase an egg yolk in the puree. We simmered the potato-egg package to set the Methocel and cook the yolk. When the potato gelled, we removed it from the water and unwrapped it. To gild the lily, we topped it with our reheatable lime pickle hollandaise sauce.
