It may look like an ordinary cake tester, but it can be used for so much more than that. Although we love it for testing baked goods, we also use it for proteins. Insert it in the thickest part of your meat or fish for 5 seconds, and then test the metal tip against the inside of your lip to see if it’s properly cooked or needs more time. Use it to pierce fruits and vegetables for brining or infusions. Stipple a cake while it’s still warm, actually getting well below the surface, before dousing it with flavored syrup. Use it on vegetable casseroles or gratins to make sure they’re cooked all the way through. Once you’ve got one, you’ll find yourself reaching for it every day. As with all good kitchen tools, it’s efficient, easy to clean and has multiple uses.
