With spring in the air, it was time to take our mozzarella noodles in another direction. Our first thoughts led to goat cheese. These tangy noodles are great on their own or with zested and sautéed fava beans. We are still working on what would be the match. Perhaps there are several answers to our question. Till we find them, we are happily eating strands of goat cheese in our preparations of the moment and the mind.
