There is a reason why the diner pairing of pie and coffee is a cliché. It is because the combination works so well. We have been working on new ways to get the flavors we want into a variety of mediums. We decided to turn our pie and ice cream inside out and upside down. Think apple pie ice cream, coffee-flavored cake, and loose streusel topping. Aki complained that the ice cream eclipsed the cake, to which I responded that in any self-respecting diner, the pie is always better than the coffee, although where we come from, pie without coffee just doesn’t work.
