We are working on feta noodles. Our first run led to a detour and some tasty results. We ended up with cubes of feta, which could be seared and served warm. One issue was their size. We ended up cutting them in half to make feta tablets. These caramelized bites will be great in a soup, or part of a salad, or even in a calamari and cock’s comb dish we are fine-tuning. For now, they work well with a touch of fig jam and a torn piece of baguette.
