Old Bay Octopus

Cooking octopus ranks right up there with cooking brisket. It is much harder than it looks. I cannot tell you how many times we have ruined octopus due to poor timing or technique and a simple lack of understanding. I do not think we fully comprehend octopus yet, though we are getting closer. We have trimmed the cooking time down and increased the heat so that the end result is a meaty and juicy tentacle with some bite, though not the horrible chewiness we found ourselves facing again and again. Our octopus is cooked at 85 degrees Celsius for four hours, a formula which for us yields great results.
