Corriher. She has the unique ability to clearly communicate information without necessarily dumbing it down. The many tasty recipes are an added bonus to the wealth of information between the covers. So, the next time you wonder why your custard curdled, take a moment to reflect and then open the book. The answers are right there for the reading. Once you understand exactly what is happening with your food, the doors begin to open, and you are able to see the forest through the trees. The beauty of knowledge is that it makes us all better cooks.
