I just stumbled across this story about Boccalone, over on the Accidental Hedonist. If I could dive into my computer and taste this gorgeous salumi, I would. I have not tried any of these products, and if they taste half as good as they look, I will be in a porcine paradise. The salumi in question is created by Chris Cosentino. The man likes offal things, and it seems his passion is our culinary windfall. As a side note, Chris and Michael Ruhlman have a head-to-tail dinner coming up in New York.
