Summertime can be quite inspiring with all the juicy fruits and vegetables available at our fingertips. Our salad of peaches and tomatoes is accented with whipped roasted banana and pine needle powder. In the past, we have used the roasted banana consommé to marinate tomatoes, so its use in whipped form is merely a variation on a theme. The pine and the peaches, well, that came from walking in the woods slurping on a peach. Ideas can be messy.
