Great ingredients inspire. We make many of our own vinegars and infuse a number of oils for different dishes. Recently, we received a call from Tyler over at Mikuni Wild Harvest. He had some incredible vinegars we should try: raspberry, lemon, and apple cider. The producer of the vinegar is Jean Marc Montegottero. This gentleman also produces incredible oils, from pistachio to argan to pine nut. The vinegars arrived, and man, are they good. We also received some of the new oils. The argan and pistachio oils were particularly impressive. We have used the lemon vinegar to simply dress watercress, which we served with apple crisp ice cream and smoked roe. The raspberry vinegar is just bouncing around my mind and palate. Well, we figured we would share these tasty culinary inspirations. Oh yeah, and if you speak with Tyler, congratulate him on being one of Food and Wine magazine’s taste makers under thirty-five. In supplying such ingredients, it is really no surprise he was chosen.
