Here is a dish we are working on which is just not quite right. It combines silky salmon with honeydew melon, cumin shoots, and onion syrup accented with broiled matsutake mushrooms. It is interesting for me to work through the tastes, textures, and flavors in order to get something we are truly happy with. While this dish is not a candidate for just before the bin, it is a candidate for needing a boatload of help.
