Be prepared to climb hills. I wish I was given these exact words of advice. Perhaps I would have traveled a different path. I do not think so. Every day I face new culinary challenges and am forced to ask more questions which have answers, though I realize they will be difficult and time-consuming to find. Yet, it is the search for these answers which keeps the senses sharp and helps pull us up the difficult mountains of continued education. It amazes me daily with how little I actually know, how, like a chicken scratching the barnyard looking for worms, I am only scratching the surface. In the same thought, I realize how lucky I am to be in a creative environment in which my learning is expected and instrumental in our own culinary development.
We are exploring the uses of ingredients, techniques, and specific tools and instruments in order to maximize culinary pleasures and functionality. The more I see and do, the more I have to search and discover. Unfortunately, in learning through doing, we make multiple mistakes and have had numerous setbacks. Though we have been able to examine our failures and leapfrog our mistakes, it is difficult to realize that the more you uncover, the more failures you will have; that is the learning curve. The benefits are equal to the hardships, and it is understanding this point which will inevitably allow us to succeed.
