We have been asked on more than one occasion what is your food philosophy. For a period of time, I tried to define our philosophy and have written in depth about it. The funny thing is, people asking the question tune out after about three sentences. Sure, it is great to talk about the philosophies which guide our approach to food, but in today’s ADD world, no one is able to hang onto a philosophy. In that case, we have a Gastronomic Signature. Like a letter or anything personal, formal, and otherwise, our signature concludes the document. Therefore, why not have a Gastronomic Signature, a telltale sign that a dish was composed by Aki or myself. In writing, our signature is:
– Appear Simple
– Look Natural
– Be Extraordinary
These brief points dictate our cuisine and thus act as our signature to our food. It is much simpler to sign your name rather than trying to explain why you have a name and what it means.
