Ingredients change with the day and season. Quality, size, taste, and texture fluctuate. These variables, while in some cases may seem a roadblock to consistency, actually provide vast stimulations to a culinary mindset. Every day presents new challenges and thrills in being able to flesh out the most of an ingredient. Similarly, the continuous growth of artisanal producers and farmers allows us to work with ingredients which possess qualities and nuances previously unavailable. It now becomes our challenge to work with these ingredients, from calamansi limes to rich and decadent maple syrup, to realize their true potential. We are fortunate enough to have relationships with individuals who want to share ideas and newly discovered or recently unearthed antique ingredients. The continuous interaction with ingredients and individuals enables us to realize how to use ingredients. A product which has remained dormant in the back of our mind may be pushed to the forefront by being exposed to and interacting with individuals and their ingredients on a daily basis.
