Our addiction to artisanal brook, sea trout, and salmon caviar and the smoked derivatives is driven by pristine ingredients handled and developed with care. We have had the pleasure of working with Steve in the idea department regarding the smoked roes and have continued exchanging ideas about derivations and new flavor profiles. Steve’s commitment to excellence determines the final product, and we are looking forward to several flavor extrapolations we are working on together. Steve is making and fine-tuning while we are fortunately sitting at the table helping to generate ideas. More to follow once the roes are tested.
