Often when we speak of garlic, we talk of hard neck, spring, or scapes. And yet we’ve discovered that summer garlic, with full bulbs that have just begun to develop their feathery paper skin, is the ultimate in flavor and texture. The stuff in the farmer’s market now is amazing, and our local vendor admonished us to keep it in the refrigerator for best quality. The bulbs are heavy, their aroma intoxicating, and the texture is crisp and delicious. We now have a greater appreciation for the ingredient and are intent on finding ways to highlight this delicious allium.
