As a nod to readers requesting recipes, we have added a new category to Ideas In Food. We’re kicking it off with one of the easiest and most popular recipes in our repertoire. It’s labeled as spicy popcorn because not everyone has access to Smoke & Fire. Just use your favorite hot sauce and enjoy!
Ingredients:
– 4 cups popped popcorn
– 1/4 cup dark brown sugar
– 1/4 cup sweet butter
– 1/4 cup maple syrup
– 1/4 teaspoon salt + additional salt to taste for finishing
– 1 tablespoon hot sauce (traditionally Fire & Smoke)
Preheat oven to 350°F. Place popcorn in a large heat-resistant bowl. Bring butter, sugar, syrup, 1 teaspoon salt, and hot sauce to a boil in a non-reactive pan. Let boil for two minutes and pour over popcorn. Toss to coat evenly with caramel. Spread coated popcorn onto a sheet tray and sprinkle with salt to taste (we are quite liberal with the salt). Bake in the oven for five minutes. Cool completely and serve. This popcorn may be stored in an airtight container for several days.
