The loaf is always ready for inclusions. Today we folded in pulled pork. The result was a smoky, meat-centric loaf with a variety of textures. It was beautiful, sliced and eaten. The remainder is destined for a few sandwiches and maybe even a pasta sauce. I do believe we have some work on our hands. A good meatloaf is easy to throw together. Creating a base that is solid on its own and easily messed with, as we are prone to do, is the challenge.
