Hand Pulling Noodles

We started our foray into the world of hand-pulled noodles. The initial takeaway is they are super simple to make, they are immediately engaging, Amaya (and I) loves the process and we need a lot more practice. We served our first run of noodles with an avocado pan sauce: white wine, butter, soy sauce, avocado, and Parmigiano Reggiano. The noodles have an amazing chew and luxurious silkiness. The avocado added a rich coating to the noodles. Now begins our need for repetition and refinement.
