Looking at the core as an essential ingredient to cooking, as opposed to garbage, allows us to find and utilize hidden flavor. We dehydrate the cores to concentrate their flavor and then use these apple bones to enrich sauces and braises, as well as provide an intense boost to the crock pot of mulled cider simmering in Peg’s kitchen. As we continue to work with them, we will see where they take us, from the smoker to the bourbon.
