Caraway and…

Caraway is a spice that goes without much fanfare and yet provides a burst of flavor and aroma when it is integrated into dishes. I revisited some of our older notebooks (downloads on the sidebar) and just searched for the word caraway. It was quite revealing to see the combinations in which we had or had plans for integrating caraway. They ranged from the simple caraway and strawberries to the more exotic cocoa-caraway with dried orange and cocoa nibs. These thoughts on caraway were further piqued when we received a fresh supply from Le Sanctuaire. The burst of aroma on opening the bag spawned another series of caraway thoughts. One, which we began work on today, was caraway and nectarines. We toasted the caraway seeds and then just cooked them with explosively ripe nectarines, a few splashes of water, and a pinch of salt. The combination of the floral summer fruit supported by the aromatic caraway is really something that shall become a staple in our summer pantry.
