We used a julienne vegetable peeler to make cucumber noodles. We then seasoned them lightly and applied a bit of vacuum pressure. The pale green cucumber became a dark Kermit green in under a minute. The noodles were crisp and juicy, vibrant and alive, and ready to use. These quick noodles went from idea to execution in a flash.
