Drawing Book

On this cold and rainy day, I have chosen to share another page from my book of drawings. As I write down my notes on a scattering of post-its, I also scribble pictures. They are visual inspirations which I then go over and bring together in my drawing book. Many of these are the basis for our final dishes. They help us work on the form and functionality of ingredients in a dish. They are the building blocks that help structure the dishes. They are also a means by which I can express thoughts and ideas for which I do not have a formulated answer. They capture a vision that we can then come back to and work with. These drawings allow me to forget, and that is a good thing.
