Strawberries and black pepper. Not that far of a reach. The floral notes of the pepper go quite well with the fruity berry. Strawberries and cream, even less of a reach. Strawberries and vinegar, again nothing new. Strawberries and dandelion, well perhaps a bit of a reach, and still the sweetness of the fruit is checked by the bitterness of the dandelion. And so we went to work. We made a delicate and bracing black pepper pudding to serve with strawberry fillets, dandelion greens, Minus 8 vinegar, and vanilla and smoked Maldon salt.
