Here is a chilled oyster dish we have begun work on. The chilled oysters are dressed with a bit of olive oil and then accompanied by claytonia leaves and whipped horseradish. The light, creamy nature of the horseradish surrounds the sweet, briny oyster while the claytonia adds a juicy, vegetal quality to the dish. The olive adds a spicy fattiness to the oysters without taking away from them.
