I received our first container of brook trout roe from Steve Stallard of Blis Caviar. The trout roe is his benchmark for all his other products. The roe is clean, nutty, and a bit grassy with a balanced salinity. Enough with flavor profiles and descriptions; the roe is impeccable. When Steve sent the roe, he said, “Just serve it on toast with a bit of butter; even that is too much.” Well, I could not leave well enough alone and put together a dish that focuses on the roe while highlighting its individual characteristics. We are serving the roe with fresh banana, banana tamarind puree, epazote, and chufa milk (horchata) and ground chufa nuts.
