The Day After Discovery

Yesterday was great; ingredients and techniques meshed. Dishes that were thoughts became reality. Riding the wave of success, I arrived early and started cooking. Well, my plans for dishes fell apart like sandcastles at the beach. Theories failed, ideas were filed… and then things came back together. I slowed down, looked at the organized chaos around me. I looked at yesterday’s leaps and looked to exploit them, refine, polish. After sifting through my culinary wreckage, one dish emerged: Roast foie gras with warm yogurt pudding, jalapeno, mango-miso, and mahleb. I let my pleasure of success create a fog. Once it was lifted, I began to avoid the rocks and see the bright blue ocean.
