It is as simple as it sounds. New experiences and ideas are constantly being weighed and measured. Our constant processing of thoughts, researching ingredients, and techniques, we are constantly making comparisons. Today is looked at through the eyes of yesterday because that is what we know. In fact, because of what we know, we may also challenge existing thoughts. Sure, everything has already been done; a given in a world filled with knowledge hounds and creative individuals. Yet, we still are challenged by what has not been done, combined, examined, or expressed. We need to relive experiences and tastes of yesterday to make them more explosive than when we were first exposed to them. In order to move forward with food, we must look at ours and others’ yesterdays to make today better and get closer to a more explosive tomorrow.
