I enjoy pie. From start to finish, pie is able to epitomize what is good with food. Take a look at the crust, smell it, break it, feel the snap, see the layers, taste the butter, understand the artistry. Ah, and the filling, from pecan balanced with treacle and rum to fresh and cooked strawberries accented with framboise. The choice of pristine berries and rich pecans. Pie is simple. Not many ingredients, not complex in appearance, and yet how often do you eat great pie? Time is too short. Crusts with inferior butter, haphazardly assembled strawberries, scrambled custard filling are met more often than the perfected execution of an individual who loves making pies. A great pie is a special treat, for it shares an experience between pie maker and eater, an understood bond appreciated by both and one which, when formed, keeps both exceptionally happy.
