I like tequila. That is the beginning and, quite frankly, the end. I wanted to capture the balance of a great margarita—a big influence—but when it’s good, just go with it—with sour, spicy, heady, rich aged, and sweet. We had a white balsamic vinegar which formed a mother, a good sign for me, so I mixed some of the live vinegar with tequila and water. Straight tequila would be too powerful for the vinegar and not allow for the proper transformation. Now I must wait and see how this new child in our pantry develops. The time will hopefully allow a couple of ideas to surface as the thoughts of tequila vinegar dance through my head.
