With the abundance of cherries at our fingertips, flavors and combinations are being tested and sampled. One hot idea from the mill is a slow-cooked cherry-miso condiment. The cherries are cooked with Vidalia onion for several hours and then puréed with miso to add salinity and a rounded flavor. The uses are many: from a marinade, vinaigrette, light froth, and BBQ sauce base.
Also, cinnamon soda float with spruce yogurt sorbet. Bark and needles united.
